The day my favourite lunch café stopped serving Daim Bar cheesecakes was a very sad one indeed. It was my favourite treat at the time and I was bereft. Daim Bar (similar to a US Heath bar), originally from Sweden, is a candy bar like no other – with brittle almond caramel and chocolate. It is the perfect addition to a cheesecake.

FOR THE CRUMB BASE

250 g/9 oz. caramelized biscuits/cookies (such as Lotus)

125 g/1 stick plus 1 tablespoon butter, melted

FOR THE FILLING

400 g/1¾ cups cream cheese

250 g/generous 1 cup ricotta

225 g/1 cup clotted cream (if unavailable, use crème fraîche)

400 g/1¾ cups condensed milk

finely grated zest of 1 lemon

4 eggs

180 g/6 oz. chopped Daim/Heath bar
